Fish Moilee - By Vahchef @ Vahrehvah.com



Hello namaste salaamwalekum satsriyakaal; welcome back to another session with your VahChef at Vahrehvah.Com. Today I'm going to make a dish from
Kerala using fish which is one of my favorite and they call it Meen Moilee
this is a excellent fish preparation i love to make this with pomfret but today i got a fish which is a bhetki first let's marinate the fish take a turmeric, salt, some pepper powder, and squeeze in half lemon juice just one and half tablespoon of coconut oil; mix these ingredients; add the pieces of fish
and mix it up. For this preparation we are going to use coconut milk and to extract the coconut milk from the coconut is very easy just take a coconut break it and remove the skin of this coconut the brown skin just so that you
get the just the white meat cut into pieces put in a blender make it into a
fine paste if you need to add, you can add some water to hand it too; and to the paste add 1 glass of hot water and that will bring out all the milk from this coconut paste later we can extract it out by using a muslin cloth. For this Fish moilee I love to use a little bit of cardamom, lot of people don't use it if you want to use it please use it just two pieces of cardamom put in the
ding chik ding chik just five six cloves of garlic and a little bit of ginger and then crush all of this and we're going to use it after we crush it.

To a hot pan add some oil and use coconut oil to this add fish; make sure cook it on all the sides once the fish is slightly grilled just remove it into another plate;  now the fish is nicely grilled just keep it on the side and in the same pan, dear friends use the same pan because this pan is got lot of fishy flavors which you want and add some more of coconut oil and when it is hot enough, add mustard seeds when the mustard seeds crackle, add the crushed garlic ginger and cardamom, slightly saute it. Add onions add curry leaves and also just break few green chillies and add to this if you notice that I've added onions we just slightly bigger pieces not chopped because it in this preparations you want to sweat the
onions not brown them just sweat it till they become slightly transparent that's good enough I. Just crushed some of the fenugreek seeds
and add to this and 1 tablespoon of coriander powder and some more of pepper powder if you want ok to this add some coconut milk and now add the pieces of fish into this since the fish is already cooked you know it will ooze out very nice flavors
just simmer these pieces in this coconut milk and add some more salt. For this
preparation tomatoes are optional lot of times when
we make fish moilee in the hotel we don't add but tomato pieces will add nice flavor and you don't want the tomatoes to be fully cooked you want them to be slightly simmered in
this so I'm going add tomatoes after i add fish and i'll also let them simmer in
this milk when this dish is ready you want a very nice silky sauce for this
fish moilee just cover it up with the lid and let it simmer we're going to add the final edition of
this coconut milk to this and simmer it for two minutes and then going to switch
off the flame that's when the real flavors of this
coconut really comes in now see the fish is almost getting tender that's when don't use a spoon or
anything to make this just take this pot and just mix it like this so that this mixes properly.

Now the fish is almost cooked that's when pour in the final drop of
some coconut milk and we're going to simmer it for another three minutes and
the fish should be done now you can see that this tomatoes are
blanched that means they become soft but not you know cooked too much and the fish is also very nice;  look at this fish let's taste this. Haha this sauce is made something
similar to the kind of sauces you see in Thai and Malaysia, lot of coconut milk with fish and this is a great combination because we added only white pepper, green chillies, salt and added coconut milk, there's a small amount of sweetness that
come because of this coconut milk huh it is very nice thick, it kind of thickens with the onions and coriander powder and so on it kind of literally coats the spoon oh
oh wow now look at this fish it is a delicate fish like to have some
pieces of tomato I like the sauce which is awesome and
all you need to do is add some more of coconut milk so Wow look at this fish huh if you want a little bit spicier you can add more green chilies or pepper powder; use white pepper powder In a five-star hotel whenever we make
fish boneless you know we add the fish later
in the last when the sauce is all ready but use fish like pomfret and this will taste awesome it's not always that you have to eat the
fish spicy with lot of masalas. This fish moilee is a milder version and the greatest thing is it tastes awesome and you can eat a lot of fish when you make it in the fish moilee style. Dear friends I hope you enjoyed today's
